Atkins, widow of low-carb guru Dr. Robert Atkins, and food editor Nathanson have compiled a tasty array of recipes for those following controlled-carbohydrate eating plans. Featured here are soups, salads, appetizers, breakfast and brunch dishes, main courses, and snacks; suggestions for brown-bag lunches, outdoor cooking, make-ahead dishes, and healthy foods for carb-conscious children; and numerous tips for storing produce, selecting meats, using herbs and spices, freezing foods, and making favorite dishes carb-friendly. Each recipe includes nutritional details: net and total carbohydrates, fiber, protein, fat, calories, number of servings, and for which of the four Atkins diet phases the dish is appropriate. Most dishes are easy to prepare and use conventional ingredients, but desserts, breads, and sweets do require Atkins and other reduced-carbohydrate products.
